About Liz:

Balance.Variety.Moderation These are concepts I have learned from using the AIH MEP. My journey into mindful eating came out of frustration and feeling inept in my ability to help clients as a Registered Dietitian. Little did I know that I was on a journey of self-discovery not just professionally but personally as well.
I grew up in Louisiana where food signified cultural identity, was a key part of all social activities and how people expressed love and kindness. My mother was a stay at home mom of five children who cooked daily. We grew up eating vegetables from my father’s garden. We also ate many Cajun dishes.
After my mother was diagnosed with colon cancer and heart disease (which was a familiar disease from which her father and aunt died), I became interested in nutrition to prevent the same diseases in myself. I became enthralled with nutrition and at that time I was looking for a career choice. It only seemed natural to take this a step further and return to college to get my degree in Nutrition and Dietetics.
Fast forward a few years and I realized that as much as knowledge and education were important tools - that was not was holding many clients back from making dietary changes. I started looking for something to help me help them. That is when I found AIH.
After attending an AIH retreat in Oracle, AZ, I came home and became committed to start the online training and I became an AIH facilitator in 2012. When I started to facilitate group classes at the clinic where I worked, I could literally see the lightbulbs going off with participants as they shared on the many aspects of the mindful eating cycle and the triggers and behaviors they had in common. In using the tools of the program in individual counseling, it was apparent that as Dr. May writes, this was the “missing link”.
What I do in facilitating and coaching clients is to use the AIH MEP to be in charge of their health behaviors and not rely only on external "experts" to dictate nutrition needs. I empower them to become their own nutrition expert. Also, to apply the tools of AIH and discover so much more about themselves and what they are really "craving".
I completed the AIH ME Coach Training in 2017 and I am putting the new tools I learned into practice. I am learning to use those principles of balance, variety and moderation in all aspects of my life such as setting boundaries on where I invest my time and energy, balancing work, social life, my jewelry design business, physical activity and relationships as well as people who make up my social circle, and learning when to say yes when I mean yes and when to say no when I mean no!
I am a Registered Dietitian/Nutritionist and Licensed in the State of Georgia. I received my BS in Nutrition and Dietetics from Louisiana Tech University in 1998.
I worked for the Veterans Health Administration for 14 years counseling veterans on a variety of health goals as well as acute and chronic disease states that are affected by diet as well as facilitating group classes, primarily for diabetes education and health and wellness. I use a HAES approach to nutrition counseling.
